Ingredients
- 1/2 rotisserie chicken, skin removed
- 4 cups of fresh spinach
- 1/4 red bell pepper, diced or sliced
- 2 slices of sweet onion
- 1/2 medium tomato, diced
- 1/2 avocado, diced
- 1/2 cup black beans, drained (save the rest for another recipe)
- 2 tablespoons olive oil
- 1 tablespoons white wine vinegar
- Pinch salt and pepper
Directions
- Fill two large bowls or plates with spinach leaves and top evenly with shredded chicken, bell pepper, avocado, onion, tomato, black beans and cheddar cheese.
- Mix olive oil, vinegar, salt and pepper in a small bowl and pour over each bowl of salad. Enjoy!
