Ingredients

  • 1/2 rotisserie chicken, skin removed
  • 4 cups of fresh spinach
  • 1/4 red bell pepper, diced or sliced
  • 2 slices of sweet onion
  • 1/2 medium tomato, diced
  • 1/2 avocado, diced
  • 1/2 cup black beans, drained (save the rest for another recipe)
  • 2 tablespoons olive oil
  • 1 tablespoons white wine vinegar
  • Pinch salt and pepper

Directions

  1. Fill two large bowls or plates with spinach leaves and top evenly with shredded chicken, bell pepper, avocado, onion, tomato, black beans and cheddar cheese.
  2. Mix olive oil, vinegar, salt and pepper in a small bowl and pour over each bowl of salad. Enjoy!
