Ingredients

  • Uncle Ben’s Ready Rice: Whole Grain Brown
  • 1/2 cup salsa (restaurant-style, or your favorite store-bought brand)
  • 1 can black beans, rinsed and drained
  • 3 roma tomatoes, diced
  • 1-1/2 cups corn (fresh, canned, or frozen)
  • Romaine lettuce, chopped
  • 1 cup of plain Greek yogurt
  • Other additions: onion, green onion, bell pepper, avocado, cilantro

Directions

  1. Cook rice using directions on package.
  2. While rice is cooking, prep your veggies.
  3. Begin layering your bowl: start with rice, black beans, and vegetables.
  4. Top with salsa and Greek yogurt.
