Lunch Box Favorites

Cheese Quesadilla Lunch

Ingredients:

  • 2 whole-wheat flour tortillas
  • Shredded cheddar cheese
  • Cooking spray
  • 2 tbsp of hummus
  • Handful of baby carrots
  • Handful of red or green grapes
  • Bottle of water

Directions:

  1. Spray a small sauté pan with cooking spray and heat over medium-low heat. Fill two tortillas with shredded cheddar cheese and place in heated pan. Turn once cheese begins to melt and the tortilla is browned.
  2. After both sides are browned, slice quesadilla into four pieces. Depending on your child’s appetite, send him or her off to school with two or four pieces.
  3. Pair quesadilla with hummus, carrots, and grapes. And don’t forget to pack the water!
  4. To prevent quesadilla from getting soggy, allow it to fully cool before placing the top on the lunch container.

Tuna Fish Salad and Crackers

Ingredients:

  • 1 small can of tuna fish (in water)
  • Mayonnaise
  • Whole-wheat crackers
  • Low-fat cheddar cheese slices
  • Sliced watermelon
  • Sliced cucumber
  • 1% milk, unflavored

Directions:

  1. Drain the can of tuna fish and mix with one or two tablespoons of mayonnaise.
  2. Peel and slice cucumbers and pair with sliced watermelon.
  3. Serve tuna fish with crackers, cheese slices, cucumber, and watermelon. Finish lunchbox off with a small carton or bottle of milk.
