Caprese Salad

Ingredients

  • 4 vine-ripe tomatoes
  • 8 ounces fresh mozzarella cheese
  • 8 basil leaves
  • Salt and pepper to taste
  • 3 tablespoons extra virgin olive oil

Directions

  1. Slice tomatoes and mozzarella into quarter-inch thick pieces.
  2. Arrange the tomatoes and mozzarella on a plate in an alternating pattern.
  3. Rip up the basil leaves with your hands and place in between the tomato and cheese slices.
  4. Sprinkle with a pinch of salt and pepper and then drizzle with olive oil.
