Pizza Roll-Up
Yields: 1
Total time: 15 minutes

Ingredients

  • 1 8-inch whole-wheat flour tortilla
  • 2 Tablespoons low-sodium marinara sauce
  • 12 leaves of baby spinach
  • 3 Tablespoons shredded part-skim mozzarella cheese

Directions

  1. Place tortilla on a plate and spread marinara sauce over the top of it.
  2. Top with an even layer of spinach, then sprinkle cheese on top.
  3. Microwave on High until the cheese is just melted (about 40 seconds).
  4. Carefully roll the tortilla up and let cool for 10 minutes before slicing into pieces, if desired.

Tip
Make ahead of time and refrigerate overnight.
