Breakfast #5: Banana Applesauce Muffins
Muffins can be made in advance and are a great on-the-go breakfast option if made using healthy ingredients.
Ingredients:
- 2 ripe bananas
- 1/2 cup sugar
- 1/4 cup unsweetened applesauce
- 1 cup white whole wheat flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
Directions:
- Preheat oven to 350 degrees F.
- Mash bananas and mix in sugar. Stir in the remaining ingredients, until the flour is just incorporated.
- Pour batter into prepared muffin tins and bake for approximately 20 minutes, until a toothpick comes out clean.
