Mini Muffin Recipes

Apple-Carrot Mini Muffins
Original Recipe: Sweet Happy Family Blog
(Makes about 36 mini muffins or 12 standard muffins)

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 cup King Arthur White Whole Wheat Flour
  • 1/4 cup cake flour
  • 3/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 3/4 cup light brown sugar, packed
  • 1/4 cup unsweetened applesauce
  • 1/4 cup butter, melted (you can also use olive oil)
  • 1/2 cup plain yogurt
  • 1 tsp pure vanilla extract
  • 2 eggs
  • 1 cup grated carrots
  • 1 medium apple, peeled and diced

Directions:

Preheat oven to 350°F. Line muffin tin with baking cups or coat them with baking spray. Cook the quinoa according to package ingredients. (I used truRoots Organic Quinoa, which tells you to combine 1/2 cup quinoa with 1 cup water. Bring to a boil, then cover and simmer on low for 15 minutes.) In a medium bowl combine the flours, baking soda and salt. In a large bowl combine the brown sugar, applesauce, butter, yogurt, vanilla and eggs. Add the carrots, apples and quinoa, stirring to combine. Fold in the dry ingredients and mix until just combined. Divide among muffin cups and bake 10-15 minutes for mini muffins (use a mini ice cream scoop to ensure mini size) or 20-25 minutes for regular muffins. The muffins are done when golden brown and a toothpick inserted in the center comes out clean.
