Summer Nutrition and Cooking Camps

By:  Carleton Rivers, RD

For many of you, summer means getting out of the house and making new friends and memories at camp. But did you know that there are specific camps that can help you lose weight and learn to cook? If you have ever been teased about your weight or if you just want to get healthy, I recommend trying a nutrition camp this summer. Just picture this: you’re surrounded by kids that are just like you, doing the same fun camp activities that other camps do, but you’re also eating great food and learning how to make better choices. Then you can head back to school in the fall stronger and smarter.

Here are a few nutrition/cooking camps that will accommodate those with a physical disability:

  • Camp Pocono Trails: Located in Reeders, PA (has separate swimming pools for girls and boys)
  • Osher Marin JCC Day Camp: San Rafael, CA

To locate more camps, visit kidscamp.com.

Of course Kids Korner Nutrition would not be complete without a fun summer recipe that you can fix at home for your friends and family.

Pizza Balls
Original Recipe

Ingredients
Canned biscuits (small rather than Grands)
Pepperoni
Shredded mozzarella
Pizza sauce for dipping
Cooking spray
Muffin tins

Directions
Preheat oven to 350°. Spray the muffin tins with cooking spray. Use kitchen scissors to cut the canned biscuits into four pieces each. Chop the pepperoni into small pieces. Hold three to four biscuit pieces in your hands and sprinkle mozzarella cheese and pepperoni on them (or have someone sprinkle the cheese and pepperoni for you). Pack and squeeze it all together like a snowball. Place into the muffin tin. Bake at 350° for around 15 to 17 minutes or until the biscuits are golden brown. Serve with pizza sauce for dipping.
